Maple Planked Apricot Dijon Pork

    * 4-5 lbs. pork loin roast with ¼ inch fat cap
    * 1/4 cup Dijon mustard
    * 1/4 cup (plus 1 tablespoon) good quality apricot jam
    * 1 tablespoon fresh ginger finely chopped
    * 1/4 cup rice wine vinegar
    * 1/4 cup olive oil
    * Salt and pepper to taste
    * Spray bottle filled with water

Directions

   1. In a small bowl mix together Dijon, apricot jam, ginger, rice wine vinegar, olive oil and pepper.
   2. Place the pork in a sealable bag, pour the marinade over the pork and toss to coat evenly. Marinade pork in the refrigerator overnight.
   3. Remove pork from marinade place on a tray.
   4. Bring spray bottle filled with water to barbeque to have handy. Remove one grill on one side of the barbeque.
   5. Preheat barbeque to high (475°F-500°F) (246°C-260°C) on the side without a grill grate. Preheat the other side to medium low heat (325F) (162C).
   6. Season the roast liberally with salt and pepper.
   7. Move the wet plank over to the medium low side and place the pork on the plank fat side up. Close barbeque lid.
   8. Slow cook for 1.5 hours, or until an instant read thermometer reads 150-160°F (65C-71°C) when inserted into the thickest part of the roast.
   9. Continue to check the plank for any flare-ups and if so, spray with water.
  10. Remove pork from grill and cover loosely with foil. Let the meat rest for 20 minutes before serving.
  11. Carve in thin slices and serve.

Re: B&H Recipe Thread fr Family Forum (Archived from Old Forums)

As a Harry Potter fan, this is a fun recipe. It's not actually alcoholic, but it's not hard to make it into an alcoholic drink, lol.

Butterbeer Recipe

The ingredients are simple. You will need the following to make two drinks:

    * 1/2 cup heavy whipping cream
    * 2 tbsp powdered sugar
    * 24 oz of your favorite cream soda
    * 2 tsp vanilla butter and nut flavoring

Start by measuring your heavy whipping cream into a bowl.

Next, add your powdered sugar.  Begin to whisk briskly.

You could also use a container like a ketchup squeeze bottle (like at chipstands) and shake it inside that until it thickens slightly, but still be loose. Shake it until, when you squeeze a little out of the bottle, it stays in a nice circle on your fingertip. It only takes 10-20 seconds of vigorous shaking.

Once your cream topping is ready, add your vanilla butter and nut flavoring  to your cream soda and stir gently so you don’t get rid of all the carbonation in the soda.

CAN’T FIND THE FLAVORING? Use 2 or 3 tablespoons of butterscotch syrup.
To make it alcoholic, use 2oz of butterscotch shnapps. (more if you're a lil gutsy Wink )

Pour your flavored cream soda into 2 beer mugs or into any chilled glass.  Gently squirt on the whipping cream mixture so that it floats on top (or spoon it on if you don’t have a squirt bottle) in a layer about a half inch thick, and serve.
